Been hitting the coals for decades and ventured into the wold of smoking with a WSM some 15 years ago. I read all I could and tried everything I could lay my hands on but still I wasn't satisfied. My standard for comparison was a rib joint a couple blocks from where I lived and I could never get anywhere near their texture, flavor and quality with the WSM. I know some people make a living competing with them but I'd starve a dreadful death if I had to depend on my skill to use one. I went through the same drill trying to equal the coffee I drank from Starbucks. I went the Sweet Maria's route investing in a coffee roaster and tried every coffee bean they offered, only to be disappointed with the results.
A few years ago at the surplus store down the road I picked up a generic "Aussie" BBQ grill for ten bucks. I don't know if the rectangular shape has anything to do with it but I've made some of the best 'que from it that has surprised even the wife. I'd bought just about ever Weber made but this 10 dollar rig has beaten them all in getting exactly what I was after.
That brings me here. Our smoking interest was resurrected by a Xmas gift from the in-laws (a MES) and I intend to put it and me through its paces, with the help of those willing souls here on SMF. I look forward to participating with everyone here in lively and interesting conversation.
