Scored a couple is chucks at Costco on sail for 5.99/lb…..

Seasoned them up with a couple of Kinders rubs and then I subbed in some bourbon (1/3c, 2c stock, 1 Tbsp each veg & beef base, 3 Tbsp W, 5 Tbsp Soy)

As usual, on the RT 1250 @ 265 with the braise pans below….

I put them on @ 9 and ran them till 3 INT @ 165 then dropped them in the braise pans and vm covered them….

Chuck one done @ INT 205 at 4:25…..

Pull them and then back in with the braising sauce…..

I also did some sliced, here they are “resting”…..YUM!

We use the pulled chuck in various sauces and such my wife makes up and tonight was Marsala….man oh man the bourbon toned chuck is a perfect match with Marsala!

The smoked chuck Marsala was placed over some GR mash and then topped with bacon, shrooms and fresh chopped herbs……I had to add a Chuck slice to increase the meat ratio on my plate (lol) oh and it’s been green goddess wedge week……

………passed out on the couch in a food comma…..I sense a early am hike to offset the feasting….
 
Those Chuckies look great. Nice Job. I have never sliced them, only use them for BBQ shredded beef sandwiches!!
 
Oh man that looks awesome. Is that the going rate for a chuckie? I never had one, I keep waiting for a $1.99 sale....guess that must have been pre-pre-pre Covid?...lol

Many thanks CF! The going price around sour parts is 5.5 to 7.99…. We find them as low as 3.99, the 1.99 price a distant dream these days…. We get 2-3 meals out of a typical chuck so it moderates the price/lb!

Thanks Ryan…..only did 2 miles vs the normal 2.5…..there was a wicked cold wind, but made up for it shivering!!!

Many thanks hammer! We do lots o chuck in our house so have had lots of practice….. I have cooked them just about every which way and the 265 & braise wins my belly all day long!

Thanks Robert! The slices were from the nice marbled section of the big one…..man o man they were like a firm meat loaf ….just magical. Some of the best slices I’ve had!
 
Tonight’s chuck bowl was over fettuccini, pan steamed greens and a Cesar with bacon!
