Local Brookshires ran St. Louis style ribs on sale for $1.99/lbs. Figured this was a great opportunity to check out my rib rack.
Nothing special - just stuck to what has worked in the past.
Honey Hog seasoning

LJ 100% Hickory in the YS640
260° - 5 hours unwrapped (spritzing with water) and 1 hour wrapped in foil
This was right before I wrapped 'em.

Looks great 👍. What did you think about the rib rack?
It worked good. I rotated the rack 1/2 way through the cook but it will come in handy cooking ribs + other things. Clean up took a bit of effort but nothing outrageous.

Thanks everyone and yes Brian, We fed many! Ran a couple of racks up North of the river to my sister and nieces (They loved 'em) as well as one of my wife's BFF families. Everyone in my small circle always appreciate good eating.

So, we took another rack last night and I decided to heat it up to the point I could pull the bones. This is how that turned out.
Took the deboned rib and did a "chop"

While our stuffed potatoes were getting melty I sliced some of it up and dipped it in the juice left in the foil (unsalted butter and Honey Hog rub)

Wow! we'll do the stuff potato experiment again. Those were incredible.
