I will never understand why people do overnight cooks.

I do the very often BUT ALWAYS use my remote therm with hi/low alarms set.
Doing 6 butts tomorrow night but will nap and keep tabs on temps. Have to work and feed a crew of 60 on Friday so sometimes not many other options.

For retired people, or people who work from home like me and only smoke for me and my wife usually, it is easy to say I'll never do an overnight. But there is a reason pit masters have those dark circles under their eyes! If you're feeding a lunch crowd the next day its kind of required unless you are reheating from a previous cook. Not a job I would want. I dont even like to cook for a half dozen anymore!...and I despise getting up early...

A brisket can go 12hrs easily and I like to give a good rest if possible.

Agree, minimum of 12hour smoke, then rest in a thermal blanket for 4 hours. I use a temp alarm to wake me up if the power goes off, which has happened once.
