Helloooooooooo Smoker operators!  I'm somewhat of a newbie to smoking.  Been grilling most of my life though.  Made a couple attempts at smoking several years ago but couldn't quite get a good grip on it.  Last year on our anniversary, the wife and I stopped at a place in Colorado called Rudy's.  Food was so awesome and we've been hooked ever since!  Actually just finished doing a bunch of modifications to one of them store bought smokers and our first brisket is smokin' away as I attempt to type this!  Can't wait to dig in!

Hello RocketCowboy and welcome to the fun.  Way to jump in feet first with trying the brisket.  GOOD LUCK!  I'm sure it will turn out great.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
