Put aluminum foil in the inside area of the pan before filling with water. This helps alot with clean up later. Keep an eye on water level and add more water when needed. Usually 2/3rd to 3/4 full is enough. The water does provide some moisture to the meat, but not much. It is used more as a heat sink and keeping temps stable. During colder weather, I switch to playbox sand instead.

Well, then I have to tell you two things. One, I am a little North of Cedar Key, closer to Chiefland and two, our low last Winter was 17º and quite a few 20's and 30's.
