water pan

I just got my smoker and I am a rookie.  It has a water pan, do you put water in it while you are cooking?   What does it do to the meat?

Yes if your smoker came with a water pan I would fill it with water & use it when you smoke something.
 
Put aluminum foil in the inside area of the pan before filling with water. This helps alot with clean up later. Keep an eye on water level and add more water when needed. Usually 2/3rd to 3/4 full is enough. The water does provide some moisture to the meat, but not much. It is used more as a heat sink and keeping temps stable. During colder weather, I switch to playbox sand instead.
