wastewater from drip tray

after I smoked some chickens I have this huge tray water andfat. What do you all do with that water? I don't want to start pouring it down the drain and clog it up.
 
It's organic.... If your drip tray was clean, you can reduce it into a stock.... taste it and see if you want to make a glaze or sauce from it... If you evaporate the water, you can make a Roux and gravy....
 
Depending on the amount of water you could pour it into a container and ref removed fat and reduce as recommended by DaveOmak the fat we take to our local recycling center they take all type's of oils here. If not interested in reducing the left over just pour it down the drain . Of course that's after removing the fat. :)
 
You can also large sealable containers like coffee cans etc. Drain the water into them and put in the freezer. This should keep it from getting smelly and then when garbage day comes dispose of it.
 
Long time ago when I used a water tray, I'd pour it out on the ground. The water would soak in and my dogs took care of the rest!
