I got a nice deal on a Cuisinart vertical propane smoker and it's working out pretty good.

My biggest issue is getting the chips to smoke.. it has a terrible combo chip/water pan (see picture)

I don't put water in it.. just chips. But it seems to be to far from the flame and too small.

I've seen mention of using a cast iron pan.. the opening is about 10 inches around the burner

Recommendations?

I like the idea of the AMNPS..

But if i did the cast iron pan, could I put a grate over the burner hole and just set the cast iron pan on it? Would that be too hot? Should I elevate it?

It would be nice to be able to use the AMNPS or the pan depending what I have on hand..
