Venison Snack Sticks

I have been wanting to try snack sticks and since I got the right size tube for my LEM i thought I would give it a try.

I got the Snack stick Kit from Gander Mountain for the first try. I had 3 lbs of ground venison left in the freezer so i went with 3 lbs.

Here it is all mixed up after sitting for about 8 hours.

Here it is all stuffed. I will let this sit in the fridge overnight and smoke it tomorrow.

First picture in the smoker after about an hour with no smoke. Now the smoke starts and I will bump up the temp each hour.

Here they are all done after a water bath to cool them down. They came out pretty darn good.
