Last year we had the same question! My Better 9/10ths echoed your sentiment saying it was one of the best steaks she had ever eaten.

That said, perhaps the only answer is that many people just don't know how to treat venison.
 
Looks great, there are a lot of folks who think the best way is to treat the deer as beef, Me not so much, very little fat. I process all of mine, I get it cooled off and into the fridge asap, I have a fridge that is only used for deer or over flow around the holidays, no longer the 4 days and at least 24 hours its sliced and vac packed. I have tried letting deer age for 1 -2 weeks and other than drying the outer layer out I haven't found any tenderness gained , folks have been fed deer and didn't like it due to gameness would like it if taken care of from the start properly. My deer doesn't taste like beef or chicken so I cant say it's the best steak I ever had, my goal isn't to try to make it taste like something it's not, just something good made with deer.
 
First off, you nailed that steak... cooked to perfection! And knowing how to process a deer is alot of it. I know several people that say they don't like venison and are surprised to hear they've had it several times.

Deer steak is certainly delicious. Love cooking the loins in large chunks instead of individual steaks. Easier to keep rare-med rare range.
 
Awesome cook on that venison. People who do not like rare to med. rare steak tend to not like venison...IMO. And that is how it really needs to be cooked to be enjoyed.
