That’s the same smoker I use to smoke my sausage, I built me a rack out of material I had laying around to smoke summer sausage or longer lengths.

I have the mes 30, suites me fine, but you might want to go with the 40 if you even think you'll need more space. if your going to smoke at low temps with the mes you will need a pellet tray or tube to produce smoke, most if not all mes smokers need to run at 200-220 to even start to burn the chips to produce smoke. I use the amnps tray and mailbox in mine, you can't beat it. check out bearcarvers step by steps he has all the info you want on the mes's.
