I always considered them to be too much trouble, and gave them away.As Chile has found out, shanks are freaking awesome!
It's odd to me that is how Shank is viewed now in America. A throw away thing. But people will pressure cook a pot roast...or braise for hours. Shank to me is just Pot Roast to the umpteenth degree. When cooked right, explosively flavourful, and just melt in the mouth tender..!I always considered them to be too much trouble, and gave them away.
I'd been told repeatedly to braise them, but was too lazy.
Well they're all mine now.
