Decided to nix the venison pepperoni and go with some Amish style SS. Mixed, cured and ready to smoke tomorrow.

Looks Similar to what is known as "Bag Sausage" at a lot of PA Dutch Butcher Shops around here.

Here are the chubs as of this morning. Left hang in smoker all night to cool.


Cloth bag peels good. Good color, smoke good to the skin

Looks good, taste is great.

Looks amazing!! I've been looking for this style of sausage for quite some time now. Would you be willing to share your recipe and smoking process including temperature? I'm somewhat new at smoking chubs and need all the information I can get.
