Vegan houseguest - can’t let him starve...

My sister and brother-in-law are coming into town for Memorial Day weekend and I plan on breaking out the smoker for some ribs and brisket. He’s a vegan, though, so I’m forced to serve some rabbit food as well. Any vegan recipe recommendations? Is there anything I can smoke?

What about those fake meatless hamburgers that were made to help them avoid their perceived guilt of eating food that used to have a face?
 
Smoke for vegetables is lipstick on a pig...which i just realized is not vegan.

There are plenty of delicious vegan meals: salads, mushrooms six ways from sunday, avocado dishes...none of them worth smoking imo. Give me a good olive oil and fresh crusty bread and i can go meatless for days (which i do....every week)

I hope that, after all your effort, you don't get the "speech".
 
Try Grilled Cauliflower Steaks on a grill: but skip the cheese if pure vegan

Serving Size: 4

Ingredients:

1 large head cauliflower, trimmed of leaves
1/4 cup balsamic syrup (or reduction)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons fresh parsley, chopped
1 1/2 teaspoons fennel seeds
1/4 cup Parmesan cheese

Directions:

1. Heat grill over medium heat. Slice 1" slices from cauliflower head. Brush each slice with olive oil, then with balsamic syrup. Sprinkle each with salt, pepper and fennel.

2. Place cauliflower onto grill and cook for 7-8 minutes. Flip steaks and cook on other side for 5-6 minutes. When cauliflower is tender, sprinkle each steak with Parmesan cheese, then parsley. Remove from grill when cheese has melted. Serve immediately.

Maybe the aroma of that delicious meat smoking will convince her...I mean him...to put down the cauliflower and eat some goodness!
 
Since eggplant came up...we eat often this eggplant spread.

Cook the eggplants whole directly on the barriers on top of the burners. Let them char then turn until all sides are charred. At this point it should be very soft. Carefully pick it up and keep it covered in a bowl for 30 min until it can be handled (but not cold). Pick the charred skin. It will peel easily but mihht break. Have a bowl of clean water to rinse your hands. Ar the end remove the stem. Drain the eggplant flesh.
Pulverize it in a food processor with chopped onion, raw peppers and oil. Olive if you like - or tasteless vegetable oil if you prefer.

If you cook more than you need peeled eggplant freezes very well.

For vegetarians and omnivors this spread is awesome with mayo instead of oil. Home made mayo. Skip the peppers if using mayo.
 
Vegans taste wonderful when done low and slow. I'd suggest a side of peppers and onions too.

All joking aside, maybe the Beyond Meat burgers or a long those lines.
 
Stuff, mushrooms with grilled bell peppers rice and these chopped up vegan dogs.
I have eaten these hot dogs numerous times growing up, actually have several cans in the pantry now. they are not what id eat regular but they wont make you gag either. There is also vegan cheese to mix in with the shrooms if you choose to buy some

I have mixed the taco stuff with, a couple different type of beans, corn and tomato sauce and topped it on lettuce for a salad.

Research the Loma linda brand. it isn't bad, if that is what you are in to.
 
It is great that you are willing to do this, and that people here are being so helpful. I've written before about the PITA vegan relative who we've had to accomodate for years. Like any eating disorder (something I unfortunately know a lot about, and veganism is exactly like anorexia, etc.), it consumes the person and everyone around them, and makes it really difficult to actually enjoy the meal.

I notice that a few in this thread have re-posted when they realized that one ingredient or another that they were suggesting is "off limits." What makes all this so tough is that each vegan has his/her own interpretation of what is on or off the list (some won't even eat honey because a bee is an animal).

What's worse, it changes over time. Our relative is now insisting that the food has to be whole, and won't touch things like olive oil because it has been pressed out of the plant (so-called "whole food plant based" diet).

I'm not making this stuff up.

Some vegans are reasonably accommodating, and hopefully your relative is one of those.

Some day I want to go to a vegetarian's house (they are usually somewhat reasonable compared to vegans who are, IMHO, off the deep end) and do what's been done to me dozens of times when they visit and say, "I'm sorry, I don't eat meat. Could you maybe fix a dish of just vegetables?" So what I want to do is visit their place and say, "I really can't make a meal out of just vegetables. Could you perhaps cook a hot dog for me?"

Why is that not considered acceptable, when the other way is?

Sorry I can't be more helpful on this one, but my experience is that trying to cook for these people is a losing proposition and you are far better off just asking them to bring their own meal.

Wtf?!?! So does the fool eat the peanuts (or whatever nut) shells and all? After all the shell is part of it, so is the whole bush/shrub (whatever a peanut plant is) roots and all. How about the vine tomatoes grow on? I hear they are tasty :emoji_laughing:Insanity, I say, Insanity!
