I know people use cedar planks for fish and other items, but could we use cedar chunks? And, could I use cedar from a tree i cut down this year?

I imagine the wood needs to dry to ensure there isn't any sap.

Personally, I would never use any evergreen to smoke meat. To me, the results is meat with the flavor of kerosene. It produces creosote that screws up the cook and your smoker.

Never used it and don't plan on it. From what I've read the smell alone is enough to make you gag.

Chris.

When people use a plank for fish they do not get smoke or fire from  the wood, so it is not the same as burning chunks, etc.

I agree with the above that I would never use any evergreen tree for smoking.
