Hey folks,

I'm just getting started getting into curing and cold smoking as part of my life-goal to learn ancient skills. I've already done some cold smoking when I decided to smoke some Gouda I made. And while that make-shift smoker worked I really want to build something less temperamental so I can cure meats and guarantee my cheeses don't melt, lol. Because nothing sucks more than accidentally melting a cheese that took me 4-6 months to make :)
 
Welcome to the site. Glad to have ya join the fun. Lots of cold smokers, cheese smokers, a few cheese makers, and plenty of members that cure meats here. Upstate NY covers a mile or two. What part are you hailing from?

I live in Valley Falls. It's a tiny village (population 450) It's located approx 1/2 between Albany and Bennington, VT
 
You making your own cheese is pretty cool in my book. Now you intend to master smoking that cheese, double kudos to you!

Hey! I was just skimming the forum and saw this post. I’m about 5 hours north of you on the Canadian border. You’re nowhere near upstate lol, you’re not even considered “mid-state”. I’ve never tried building a cold smoker but there are a lot of options you could purchase. Is it just for personal use?

Yes, on a large forum like this there will always be someone who is more "upstate"/"North" than me., lol. Mostly the term was for everyone outside of NY who thinks New York is the same as NYC.

Yes, the smoker would be for personal use. Initially I may go with one of the AMAZN smokers since a smoke time of 3-4 hours would take care of most cheeses. But I think ultimately I'll need to build something since I'd like to use wood instead of pellets.
 
Haha yeah I know it’s all relevant to where you live. They call everything north of the city “upstate”. You ever try a smoker gun?
