Costellos and tenderloins cold smoking is done and my smoker is ready for new voyage.... 14 lb ham, cured for 5 weeks and ready to turn in to smoked prosciutto.... its gunna take at least two weeks, 4 to 6 hrs a day smoking at temp not more than 10 to 15 deg C....it should be aged by august next year at earliest....

Looks like a good start but a long time till the finish but very interesting and hopefully worth the wait.

That's a long wait but..... I'm in.... I've gotta do that one day.... BUT... I'm about to the point I don't buy ripe bananas....
 
New update:
Month away from " Grand opening pork leg prosciutto" meaning: we gunna get two tall boys beer cases and start cutting paper thin slices and lay slices on freshly baked ciabata bread dipped in olive/garlic oil... wait for the video update in august...
pics showing some nice healthy (white/green) penicillin build-up on bottom...

UPDATE....
It's happening again... can't wait as promised... Cut open pork leg ( shunka aka prosciutto) about 2 weeks early just to taste and see how it goes...lol...
And it goes very good... good color, nice texture and heavenly taste...
From now, it goes back to hang in cold room and every 3 to 4 days I'll shave small platter full of goodies...
BTW... This home made prosciutto slices use home made, pear moonshine as UBER ride...

Thanks.. No patience here... to have perfect home made prosciutto pork leg it takes 18 month... In 40 years I managed only 4 times to wait 18 month long just cuz I had three pork legs going on at a same time...lol... Finished off two legs by the time third got 18 month old...lol...
It's hard just to sniff on goodie for 18 straight month ...lol
