18 days in vac pack, cure # 2... decided to smoke it in my kamado smoker... cherry wood chips, 5 days , 6 hrs per day @ 5 to 8 degC...

Looks good so far!
I have had a roll of panchetta in my curing chamber since June & it's still not dry enough!

thanks Al... Yes, it takes long time... this one will take up to 8 month to dry and age... but it is worthy to wait ...

Update: Dec. 22.19...
7 days cold smoke... last smoke before coppa and rolled panchetta goes to drying/aging chamber for at least 4 months...
