I boost umami in nearly all of my cooking especially smoked stuff. Absolute must for beef. I prefer the blank slate msg gives and add to my injection to get uniform penetration. Usually .25-.5% by weight.
 
It is bit of an acquired taste if I would say. Also it doesn't taste the same as it smells, if that makes sense.
 
I saw Red Boat at Costco last week. I forget the price, but a 2-pack for less than I was getting it for at Amazon.
