I boost umami in nearly all of my cooking especially smoked stuff. Absolute must for beef. I prefer the blank slate msg gives and add to my injection to get uniform penetration. Usually .25-.5% by weight.

A good Fish Sauce should not reek any off-putting fishy odor.
Smells to me of fish, but more so of fish in a fresh, very briney oceanic air.

Yes, it makes perfect sense to me.
I love smelly, stinky cheese, it tastes nothing like it smells.
