Got some 50mm UMAi casings bout a year ago. Bout time to try them, but I want to try some traditional too. So 2.5 lbs into UMAi and 2.5 in a protein lined casing.

Went with 50/50 lean beef and pork.

I think I should have twisted the UMAi some before zip tying it shut. Hope they still work.
Got some mold growing too for the traditional one
 
Adam You can still twist them tighter and use another tie

I dont use the zip ties, i found they cut into the UMAi bag.
Just my way.

Thanks. First time trying the umai, the protein lined and the seasoning.

I am in for a ride.
 
72 hour fermentation.
Some light mold on the protein lined casing.

Barely enough room in my chamber.

Yes . I hang mine . I made a rack that I ferment on , and when that's done I just move the whole rack to my dedicated fridge .
So you have a chamber to do the traditional ?
