Ordered a PH meter.

Going to try a batch of Landjaeger using Umai 32mm casings.

If that is successful, I want to try a Sujuk.

Any recipe anyone is willing to share?

Have done the landjaeger in the past year and somehow screwed up. Not sure where so no help. But did the Sudzhuk with good result.
Got 3500g. Brisket
90 g. Salt
9g. Cure #2
10.5g. Black pepper
5.25 g. Coriander
35g. Garlic
30g.onion
10.5g.dectrose
10g. Paprika
3g. Cayenne
2g. Thyme
1/4 -1/3 cup whiskey
0.7g. -1/2 tsp. T-spx
Turned out good. Hope this helps you.

I've crossed over a few formulas into Umai . Just make sure you follow the Umai directions .
 
I keep saying I'm going to get into the Umai game but haven't yet. Already have cure#2 on hand just for it. Maybe this coming year .......
 
Ups! Screwed up in my post and don't know how to fix it. I used cure #2 and NOT no 1.
If you ever need to edit a post at the bottom where it says report, then to right of that is 3 dots and a triangle... click that, will bring up options to edit.

I made besaola with Umai and was very pleased with the ease of use and the quality of the finished product.

I received a few spice packs for making my own salami. One problem, I can’t find a recipe or video which tells me the kind of meat to use to make the landjaeger. Pork, beef, veal, turkey, pork belly, venison??? Any body know what is supposed to be used for making 5 lbs. would be greatly appreciated.

Most recipes I saw on Google said a mixture of pork and beef.
