Both the elk and pancetta coming along nicely.

Got a while yet. Normally i dont weigh but for the new folks to UMAi i am on these.

Elk has the vacmouse across the bag as it was sealed in a traditional style maching.


Pancetta has no vacmouse as i used my chamber sealer.

 
On racks in my dinky fridge.

I'm going with 30+days on the Panc. Squeeze and could go longer.

I have a dinky fridge on the end of the island, fits perfect. I keep my UMAi items on a frogmat so i dont get rack marks in the meat.
