A couple months back, I started a new UMAi project, this time was Capicola. I followed the UMAi recipe, and pulled the first one today, at 35% weight loss. I only sliced a few pieces, but what I tried was delicious. I have vacuum sealed it, and back to the fridge to equalize bc I hear it comes out even better that way. Finished product has a nice texture, mild but a hint of spice, with a very nice flavor. May have a little case hardening on the edges but overall I’m pretty pleased with the results.
