Smoking a couple of butts. One I fully cook and use for pulled pork. The other I am going to pull off at 160 IT and cube for Carne Adovada which I will mix with the red chile and freeze---When ready--------thaw, add 1/2 cup water and throw the dish in the oven for 1- 1 and 1/2 hours or until tender , serve with rice and beans---yum, yum.---I hope.

Finished the other butt; Wrapped it in foil with a little apple cider vinegar, let it cook until it hit 195 (about 3.5 hours---so a total of 8.5 almost 9 hours). Off the grill, wrapped in towel and put in a cooler for three more hours----came out perfect, shredded it, bagged it and now in the freezer. I will save it for BBQ, burritos, enchiladas etc.

So $24 for two butts (Costco--17.77 lbs total), was enough for 5 full dinners and each dinner should yield 4-5 servings. So enough meat for 20-25 servings. About $1.00 per serving---Can't go wrong with pork.
 
That’s a good deal on the meat. I know Costco has good meat
