Had some chicken I was gonna saute up for last nights dinner. Also had some bacon and some garlic/rosemary chicken sausage in the fridge. Read Jeffs recent newsletter on bacon wrapped chicken and decided to incorporate all I had into one meal. Pounded the chicken out a little, wrapped it around a sausage and wrapped the budle with a slice of bacon. Smoked with cherry wood chunks at 250 for about 2 hours. The sausage was precooked so when the sausage IT hit 140 I figured they were good to go. Paired them up with some rice pilaf for a really nice quick, easy meal. Everything stayed nice and juicy, bacon crisped up well and the bundle held together great. Newsletter came at a great time Jeff.
