Twist on fat cap debate

Decided to take the fat cap / no fat cap debate to a different level.  I wondered if one could have the best of both worlds.  I trimmed considerable fat to allow rub & smoke penetration but put some oft he fat back on for moisture.  The experiment is in the smoke.

I tried that with tri tip and found it really didn't make a difference.
