i've smoked three days in a row, can't get enough! found these turkey wings on sale the other day, figured they'd be good smoked. soaked in water with salt/sugar/brown sugar for 24hrs.

seasoned with my basic seasoning(onion, garlic, crushed red pepper, seasoned salt.) wrapped in bacon, then some fresh ground pepper over the bacon.

never cooked turkey wings before, i used the deejays meat temp guide, very helpful info. http://www.deejayssmokepit.net/Downloads_files/Time-Temperature.pdf

got the smoker going, temp was around 280, put wings on at 12:15. used mostly oak with a few pieces of hickory.

one set got a splash of apple juice about once every 45mins. the other two got some thin spicy/vinegar sauce slapped on after 2hrs. Scott's sauce, pretty good.

checked IMT at 2.5hrs, 150-160. two wings went another 30mins before hitting 172 and 180, the last one took almost 3.5hrs before hitting 170.

so 3-3.5hrs cooking time at temps between 270-290 mostly. meat was real good. if i could go back, i woulda soaked the one wing in apple juice and the other two in the scotts sauce for maybe an hour before cooking for extra flavoring in the meat. the family really loved it though.

If you ever get any Cure #1, add 1 tbsp to a gallon of water/juices and soak in it over night, along with any other spices, seasonings, etc.   You'll get some hammy tasting wings, a whole new depth of flavor!

x2 you'll be amazed at the difference. They'll stay juicy and the bacon won't burn cause you'll be able to take them off earlier. Those look great!

For a second I wasn't sure what was getting sprinkled on them
