Not a good idea, cause by the time you get the stuffing up to a safe temp the turkey will be overcooked.
Better off to make the stuffing in a pan, or we make stuffing balls & smoke them. That way you get a nice crust all around the ball & tender stuffing inside.

Do dressing outside the turkey maybe.. in an aluminum pan. You should do half smoked and half not. Some people might like it more traditional. Oh, You could stir it and keep an eye on moisture in it.
