I am planning on smoking turkey legs for Thanksgiving this year. My son tried one at the fair recently and he liked it. I am planning on doing a cure to get that ham like flavor. One thing my wife commented on about the legs at the fair were how greasy they were. They were dripping with a lot of grease and getting all over our hands. Is there any way to reduce or eliminate this when it comes to smoking these? Thanks
