I heard about this air drying thing in the fridge over night. Figured this would speed up the process cold and really windy

Got super lucky. Brought some left overs to a friends house and we were outside

Mike I brined them last night before tossing them on the smoker today at 12. They air dried for little over 2 hours in heavy wind and cold. Week worth of curing in 2 hours. Kinda like drying my wood in the oven
 
I got the skin so dry the run couldn't really stick. I pretty much tossed all the skin. Should have gave it to my dogs. I spritz twice with some tea. Turnout really good and tender btw. I'm usually not a fan of meat right after being cooked or even 20 minutes test but this came out great. Will be twice as good for lunch tomorrow.
 
Both pure bread Australian Shepard. The bigger one in the back are supposed to be a mini. Not very well trained dogs. Always jumping on me when I come over. I'd post a pic of mine but can't do that at home. I've got 3.
