I worked over the thanksgiving weekend so I didn’t do any turkey. I pulled a turkey breast out of the freezer and let it thaw. Deboned it and coated it in Sovereign BBQ Sweet Heat rub. Then cooked it Texas style. That is...smoked at approx 300 degrees with a couple of cherry chunks until a IT of 140 degrees. Then foiled with butter and back on the grill until IT of 160 degrees. Used the Weber kettle trying to learn a little heat management with it. Let it rest for about an hour then put bbq sauce on one half and left the other dry. Sliced it thin for sammichs.
