I sorry for the delay , but last night's ER run still has me exhausted, I'm finally settling down and will take a nap before I begin .

To make this a true Poultry post here is a preview :

Be doing her at 275*f and (oh. I need to calibrate my Mavs) monitor to  160* and rest...

Well , a day late and a dollar short , but the Bird is done

.

Wanted to get started at 6 or 7 am , but as it goes around here , Trish need a ride to town , wanted - smell good hand cleaner

. It' a Nurse thing...anyhow:

You know how a Turkey Breast looks like so , I won't show that ; but here's the other stuff...

Almost done , by the time I got in and got a pan to carry it, it was at 170*f .

Perfect all the wat through , and the Skin was bite through tender (even for someone with no Teeth)

.

It was juicy too ; sorry JJ, didn't clean my 'presentation plate' , wanted them to see the juice

.

The two days brine didn't hurt anything , it's got a nice tender bite , and the flavor and juices... this may hold enough juice to make a good Hot Turkey Sammie tomorrow , it's loaded...
