I guys I'm new here and was going to try to make some tuning plates for my offset smoker. I have access to scrap metal and can make anything I need. Mostly what I am looking for is the concept or theory behind using them. I know the ultimate goal is to have even heat thru the cooking chamber the arranging and things is what I'm having a problem in understanding. Any advice good or bad is helpful
