I have been wanting to try Bears recipe for a while now so I thought I would give this a try. I did not have all of the ingredients Bear listed and I am not a fan of Fennel or Anise seed so I changed it a bit.

4 Pounds of Ground venison 

Dry Mix:
Black Pepper
Red Pepper Flakes
Three Onion Rub (Pampered Chef)

Bell Pepper Herb Rub (Pampered Chef)
Garlic Powder
Onion Powder  

Tender Quick at 1 TBS per pound.

Wet and Dry mixed:


4 lbs Venison


Mixed and ready to sit till tomorrow


Tomorrow I will smoke this and then slice it up.

Sounds great, fry up some of those eggplant to go with it and you will be set.

My mini bear loaf went into the smoker today with a tube full of mesquite.


Now it will smoke and then rest, get sliced and packaged.

I cannot wait to try it.

Ok here it is all sliced up. This came out fantastic! My son loves it and my wife likes it as well. So I will be making more of this in the future.

This was such a hit with my son (and his girlfriend) that he said to me on Friday "the venison loaf is almost gone and I noticed you have not started a new batch yet". So a new batch was prepared and is now in the smoker.

Ready for the smoker:

 
So I sliced this up tonight and it is good. Made a few changes this time:

4 Pounds of Ground venison 

Dry Mix:
Black Pepper
Red Pepper Flakes (1 TBSP instead of 3/4 TBSP)
Three Onion Rub (Pampered Chef)

Basil Rub (Pampered Chef)
Italian Seasoning

Garlic Powder
Onion Powder 

Tender Quick at 1 TBS per pound.

Going from 3/4 TBSP to 1 TBSP in the red pepper flakes made more of a difference in heat than I thought it would. Still very good but a bit hotter.

I recommend it, it is really good and very easy to make. You cannot go wrong with one of Bears recipes.
