I smeared it with mustard...put some rub on it..fat side up.....have the gas smoker cleaned and at 200 deg F with water pan...getting good smoke from soaked hickory ...planning on cooking to 140...I like med rare...wife likes well...she can have the thinner end lol..when done I will let it rest in a pan in the oven for about 30 minutes.
Am I missing anything?

Oh yeah.....I had it out of the fridge for about 4 hours before starting....trying to get it to room temp first.

I don't think so.

I had kind of the same situation with my wife.  She didn't like to see ANY pink in her meat.  Over time, I have converted her to a medium rare lover.  I started by doing what you're doing, then dropping the final IT a few degrees at a time as I smoked beef roasts.  I gave up my love of rare meat and met her kind of in the middle.  We're both now medium-rare lovers.

Please stop doing that.  It's kind of an old wives tale that has persisted about room temperature meat cooking more evenly.  You'll be fine today, but it can compromise safety.  There is absolutely nothing wrong with taking meat directly from the refrigerator and putting it in the smoker or on the grill.

5 hours later....143 deg....it's resting now.
I have heard somewhere....not sure if true or not, that the temp can rise 5 to 10 deg while resting. Anyone know if thats true?

Yes it's true, the temp will rise 5-10 degrees in 20-30 minutes of rest.
