Truffle Bacon Beef Loin, Christmas Eve!

Greetings….needed a break from chaos of sugar tantrums and Santa questions. Good times! Lots of cooking to catch up on, tonight:
Beef Tenderloin, bacon weave, truffle sauce lather .
Beef Loin Trimmed, saved some for chili later:

Bacon weave….I need to practice this a bit:

Truffle Sauce on the bacon, then did an ok wrap:

I set the Pellet pooper at 250 with apple and AMNPS with hickory.

Pulled at IT of 130, rested while we air fried some Brussels sprouts then drizzled with bacon grease and finished baked potatoes. We planned on twice baked, but ran out of time.

Mrs Clause and I enjoyed the truffle sauce “wet rub”, bacon, beef loin mouth party with a glass of wine from a bottle that had a really cool picture on the label. Kids devoured the meat too, which is always a bonus at this age. Truffles seem to be very popular now and I can taste why. At the current price of beef, when I do splurge for a cut of amazing red meat, the extra 10 bucks for the truffle sauce is worth it.
Merry Christmas Everyone….time to start stacking the tree….

Thank you! Very appreciated, no twine, just wrapped like a burrito then kept the seam on the bottom.
 
This thread was such a hit that I thought I’d follow up with todays leftover cheese sandwiches!
Butter, wine, onion, mushroom, garlic into CI:

Remove, then Thin slice leftover and throw into same pan:

chop up while heating, mixed in Onion and shrooms, then threw in Havarti, Gouda, and Swiss cheese and mixed until melted.

Then toasted buttered bread….second family meal on this amazing loin. High end truffle grilled cheese post present opening chaos!

That is all just fantastic! I’m in awe. And the follow up sammich! That is just amazingly prepared and executed. I’m SV with a prime rib today, wishing now I would have bought a tenderloin. That said, I can see those sammiches in my future, maybe tomorrow. Excellent job. Big like.

Thank you brother! We were very happy with the diner and lunch, they were both so rich that I’m actually craving fruit and salads now!

Beautiful job, Jed--on both meals. Just a "tad" under cooked for me--I'm more of a medium fan--but I'm in the minority there. That sammie sounds to die for.

Thank you Gary! Yes, some in my like it more medium. I accommodate by cooking up their slices a bit more in a hot skillet after slicing. No drama here! I appreciate your time and compliments!

Thank you Sir! The bacon was definitely a bit under. I’ll turn the heat up a bit more next time to see if I can crisp it more, but I didn’t mind, it was mostly for the fatty bacon flavor. My wife didn’t eat the bacon, she’s big on the crispy too!

Thank you Sir! The bacon was definitely a bit under. I’ll turn the heat up a bit more next time to see if I can crisp it more, but I didn’t mind, it was mostly for the fatty bacon flavor. My wife didn’t eat the bacon, she’s big on the crispy too!

May I suggest cooking the bacon in the microwave until it's about half done before you do the wrap this usually allows it to finish cooking while in the smoker and makes it more edible
 
You got the Christmas gift of a carousel ride , very nice.

The process of the first meal fantastic, but I also have to be a little more done. But that is just us. But that is how I cooked it for many people.

Now your second meal....That cheese steak. I would really be asking for seconds . And that should also make the ride.
