True Dinosaur Beef Ribs!!

My son-in-law and his parents bought the local locker this past April and when he told us the news I told him that was going to be my Part Time/ Fullish time job cause I’m retiring from my present job after 40 years the end of December.

He said they were figuring on it. With the pandemic going on they are crazy busy and have been for many years but now more than ever. They butcher custom, inspected and official beef along with pork and lamb. Presently 2022 is filled up and they are booking slots for 2022.

I’ve been already working there when I can to help them with orders. When it’s time to trim the beef rib plate I said WOW we need to smoke these bad boys sometime! He loves to eat as much as I do and he said he would make it happen. So last week they finally butchered a beef for there retail counter and Josh saved these Dinosaur Beef Ribs to be smoked !
Today is the day the ribs were seasoned with Kosher Salt, Black Pepper and Red Pepper Flakes. This is a new venture so I’m Smoking them for nine hours at 230 degrees.

I'm just gonna say that I think you should crank the cooking temp up to 275°-300°, it'd really help with rendering fat and the Maillard reaction in putting a good bark on'em.
