On one of the few nice days this Summer in the UK I was smoking son ribs (2nd time round and a novice) and when the first basket of charcoal started losing its heat I had real problems in keeping a steady temperature while re-stocking with new bricks. Should I have been adding new bricks regularly which means opening the charcoal lid and losing the valuable heat as well??

Confused from UK.

Hi Mark, I just want to let you know I moved this thread into the "Charcoal Smokers" forum, I think you will get a lot better exposure to your question over here.

Sorry I can't be much help but I've never used a charcoal smoker but I think if you let everyone know what kind of smoker you are using it will help them to help you with your temp problems.

What kind of smoker are you using?

When I smoke ribs on my Weber kettle, I build a fire on one side (a chemney full) and put the ribs on the other side.

I put about 10 to 15 new bricketts on about an hour later.

Your right in not opening your grill. Save the heat!
