My wife went to CostCo today and was so excited when she found a Tri Tip. Like many of you here, I've read so much about the tri tip roast and always wanted to try one but in VA they just don't seem to exist (I even asked the butcher once and brought out a brisket). These are more like steaks so I'm guessing it’s a Tri Tip roast cut into strips? So do I smoke them or throw them on a hot grill cooked med rare like a sirloin steak? If smoke how what temps?

A hot grill would be the way to go with those.  Med rare and off.

And yes, they are simply a tri tip sliced into steaks.

Just let it rest after you take it off the grill.
