Smoked the small roast at 225 until 125 on the Rec Tec590 using mixed lumber jack hickory pellets and chips in the tube. Only took one hour to hit 125. Into 130 SV for 6 hours. Has a very good smoke flavor and tender. This tube is going to add just enough smoke to the pellet pooper. I think I will be 100 percent happy now. Thanks to everybody who helped me on this journey. Roasted some Okra from local farmer.

One image looks over cooked and other under. Think need better camera but was just right mid rare.
 
Looks great! My phone camera isn't so hot either but if I use the flash it helps a bit.
 
Food looks good to me. Heck I'm just happy to get my pics properly centered.
