Made my second Tri-Tip invited My friend Jack and his wife Red, in an attempt increase smoke duration I put a piece of paraffin charcoal lighter in my CIP and one piece of charcoal on top got the charcoal white than put 1 large piece of hickory on top of the charcole when it stated to smoke I put it in my preheated smoker 235 it was at 130d in 1hr and 45 min. took it out and rapped it in foil for 1/2 hr. It stayed outside for the 1/2hr ambant temp 89. when i unrapped it, it was nice and warm

That TT really looks delicious!
They are very expensive around here so we usually stick to brisket!

Nice TT. Like SmokinAl, they are rare and only stocked at Sams occasionally and they run $4-$6#. Butcher shop get $9-$10. I’m down to one left in the freezer from my last Sams hoard.
