Dakota, I would check with Harvard meats. They should be able to trim a brisket to your specifications. 1901 S Elm in Broken Arrow.

Thanks! I've been in the Tulsa area for 25 years. I was actually just at Harvard meats the other day, grabbed some andouille and beef livers. It was fresh on my mind.
