    Trimming up a beautiful prime packer that I found at Costco today. Drinkin a homebrew in the process.

      Just wondering, is that a flat or did you remove the point? Looks like a nice piece of beef though!

    It's the flat side, but a whole packer that I trimmed out. It's a smaller one, only about 7 pounds after trimming.

    Here's the fat-cap side.

      Ahhh. Are you smoking them separately or at the same time? Cooking times/temps will probably be different.  Maybe the flat for sliced brisket and the point for, wait for it,    MAN CANDY! Can't wait to see!

    It's going to be done together, with 3 racks of spares added along the way. I'm new to smoking (this is only my 4th brisket) so I'm still figuring things out. With the help of many of y'all, I've learned that I have been doing more wrong than right!!

    We all learn something new here everyday. Even a bad smoke is still a beautiful day though, and ya know no matter what ya think it all gets eaten.

    Oh I've come to learn that! Love smokin! And you're exactly right! It all definitely gets eaten!!!

  13. alright thats what im talkin about!..get em started early! nothing better than a little daddy time with something smoking in the background my 3 yr old little girl is always wanting to help me out on the smoker..from handing me wood chunks to holding the flashlight..lol. she loves gettin her hands dirty when it comes to rub down time on anythng were gunna smoke.....good food and family my friend...good food and family.

    Thanks! I'm very fortunate that our local Costco has some pretty good meat! (At least I think they do!)

    Did you say that packer was actually "prime"? I don't think I've ever seen one at my local Costco. Just Choice and Select.

    Yup! First time I've seen prime at Costco too. I was looking in the bin where they usually keep their briskets and my wife was commenting that none of the "choice" really looked that good. She flagged down the guy behind the window and he pointed across the aisle.... A whole end cap of nothing but USDA prime.....$2.65/lb too!!

  20. Waitin for the finished pics!! And what home brew are we having ? I just kegged a Green flash west coast IPA clone yesterday ... Should be on tap in a few days ..have to clear out the watermelon wheat first!
