Second smoke on the new WSM.

Royal Oak charcoal. Mesquite chunks. Blue bag briquettes to start.

Two 4 pound butts.. one with Beer-B-Qs rub, one with SPOG.

Turned the low vents pretty much off (about 20% open)  and the top open.

Hit 140 right at 3.5 hours...

Been kinda stalling for a while.

Now at 161..

I am having a good time,may not foil at 165.

Have had to shake the coals and add chunks a few times,seems to be holding 230 fairly steady.

Do you normally foil? When I started I always foiled and then I decided to experiment. The first butts I did without foiling were fantastic, we liked the bark SO much better.

I'd agree. I'm glad I didn't foil with my last butt. The bark was awesome. Really tasty and a great texture. 
 
Yes sir, good ole vinegary sauce! I never foil anymore, not that its bad to, I just prefer a crusty bark. The contrast in textures is nice. I hope your having a good day and a good smoke session.

It's gonna be "one of them"....

11 hours and just now hitting 190. Temps holding 225-240.

Looks great without the foiling.

Lots of charcoal left and some chunks still smoking!!

lookin good, I  just got my WSM 22" I'm putting it together now been reading about some issues with the door not fitting securely and letting excess air in got any advice???  Thanks and nice Q-view....mmmmmmm   mmmmmmm tasty!!!
