One thing I’ve always thought about the reverse flow is that the drippings vaporizing on the reverse flow plate add a nice, extra layer of flavor that you don’t get when cooking in pans.

On the other hand, Im a big believer in a clean cooker....and cooking in pans sure keeps it nice and clean.

What say you?
 
You wont get a full envelopment when Its setting in a pan, also the bottom gets grease logged, a cooling rack under the meat can be used to get it up off the bottom of the pan and get some smoke on the bottom also.
 
Clean and smoker do not belong in the same sentence.

I do a lot of smoking in pans, but you are right about the flavor being better when the grease hits the RF plate. But with my Lang there is a large drain at the end of the RF plate, so I can hose the smoker down & crank the temp up when I’m done smoking & it basically steam cleans itself.

I’ve had my lang for 14 years and for most of it I haven’t used foil or pans. A couple years ago I started using foil but I always end up with grease under the foil that ends up gluing pieces of foil down to the reverse flow plate.

Recently switched to pans but I just don’t feel like the food is as good.

I know most people swear by wrapping their food and I’ve just started doing that in the last year or two as well but I really think I like mine best cooked on the grate from start to finish with no wrapping no pans.
