Got turned onto the stuff in Cancun and see that vacation thread got me fired up to do another run. Made it a few times and it was ok but had a plan for this one to try and finally nail it down and proud to say I did. Happened to talk about it to lady running my local latina market and she suggested tostada and dayum was she right! I normally use tort chips...

Rotis chicken meat, warmed with a small can of chipotle SAUCE, plus chopped red onion. Top with colby jack cheese and a quick baked to melt and toast. Wicked good straight up, but you can tweak to your liking. I added water to thin and some ketchup for slight BBQ thing to keep wife friendly. Crema was 50/50 sour cream/buttermilk. Best yet. Do not normally use that for this but working on fish taco recipe so decided to make it.

Not the best looking stuff as I was rushing due to weekday meal but thought you might enjoy.

Chicken Tinga is definitely a game changer for a quick weekday meal, especially if you use rotisserie chicken to save time. Warming the meat with a can of chipotle sauce and some red onion is the perfect base, but serving it on tostadas instead of standard chips really takes it to the next level. It’s a simple recipe that's easy to adjust depending on how much heat you like.

Is the cream component necessary or can it be omitted?

I also have not heard of it. I'll bet it tastes great. I would likely need to tone down the chipotle heat a bit.

THANKS all. Never heard of it either until Cancun. You know how it goes, we are loading up on seafood and fancy apps the resort has then on last day of the trip we're out of ideas and tell our guy to surprise us and he brings this on tort chips!!!

I used HALF of the meat of the rotis chicken and it made 8-9 of these. I can routinely get them for $3.50 as I typically shop late due to work. Yield is 1.5lbs so this was 3/4lb of meat. Used the other half to make taquitos (top of plate) and while good, I'm still dialing it in. I grabbed the rotis chicken a few days in advance but stripped day I got it, while still warm. Takes like 2m. Save carcass for stock if into that.

If you tweak, try to keep on dry side or it turns into a soggy mess.

OK, I made it a few days later. Added peppers, cilantro and tomatoes.
Too funny, I wanted to add the exact same but forced myself to stay stock. Remind me to bug you, I want to really geek out on fish tacos.

Stealing that move. I do ask waitresses stuff like that but was sorta deer in the headlights at the resort.
 
I'm also in the never heard of it club, but I'd give it a try. Look great Sam.
