I need to smoke two pork butts (for pulled pork). How will that affect the timing, since one pork butt already takes 12-14 hours?

I have an electric smoker with four shelves.

No real difference between one or twenty one.

They won't probably be ready at the same exact time. I've had Butts of similar sized up to an hour apart, and larger finish before smaller.

So monitor IT and tenderness individually.

You will not notice much if any difference in time when smoking two vs one. It takes a little longer to bring temps up when you first put the cold meat into the smoker but it's not enough difference to really matter.

Quick follow up question: my smoker has the water dish directly below the grates and that catches most of the drippings. Is that the stuff (drippings+remaining water) I should use as "au jus" to pour over the shredded pork?

Yes. But, it would be better to place another pan on the rack directly below the butts instead of using the water/drip pan.

No.
You do not use watered down drippings for Au jus.... Ugh!
Place a separate pan to catch drippings/juices for making Au jus.

That's what everyone said when I tried 2. 25.5hrs for me with MES30. Lost a lot of sleep but turned out fine.
