Thursday evening pork loin smoke

Hey guys! So i had an idea to make a pork loin stuffed with apple pie filling and when i got online i saw a thread suggesting that very same thing, since i already had a pork loin in the fridge i was sold!
The loin was almost pushing 3.5 lbs so i cut a 1/3 chunk of it for another day.
The remaining 2/3 i fillet it to make it easier for rolling. I had the wife whip up some quik apple pie filling with bacon bits from the last batch of maple bacon. Made a quik rub with little rosemary in it(that was a good call) paired with roasted taters. Smoked for 2.5 hrs at 250 with apple/ oak mix then finished in the oven at 300 for 30min. I must admit it was quite delicious but that being said it would have been perrfect if i had pulled it out 10min sooner. I was getting tired and hungry since i hadn't really rested when i got home from work. There isn't any leftovers for my lunch tomorrow:(
