When I first started doing this I used unflavored gelatin on the cut side , and put them together thick to thin . It worked , but it stays together pretty good without . That's actually turkey in that picture , but I do the same with chicken .Do you use meat glue for that Rich?
Nice!!! I've been cutting into smaller strips and grilling hot and fast and they come out great and juicy. I just don't over do them.Put a few together and smoke some sandwich meat .

And.......they trimmed the bone!!! more bang for your buck! I think the long bone untrimmed is a total ripoff..Saw these in my local Town&Country store. I was sorely tempted, but I don't have a smoker right now. And I know if I go back tomorrow, they'll all be gone.
