Brined/cured with Pop’s Brine. 3 days in the brine. Smoked at 225 with Hickory and Cherry this year. 3.5 hours to cook.

So I had a really weird situation with the cook tonight. The three legs in the picture were the biggest legs. I had a smaller 4th leg. I swear it came up to temp when I checked it with my Thermapen. But once I got it inside I checked it in multiple places again just to be sure. Now all of a sudden it was only probing at 155 internal. Well this freaked me out so I put it back on the smoker. And the damn thing just wouldn’t come back up compared to the big legs. I kept checking the thickest parts of the small leg and it stayed in the 150s for a long time. The big legs got done and I pulled them off. It took the smallest leg an additional 20 minutes to hit the safe temps. This makes no sense to me. How in the heck does the small leg initially temp good...drop quickly below a safe temp...then take forever to come back to temp once it’s put back on the smoker...taking longer than even the bigger legs?
